Sunday- the day the Lord has made! :)

Sunday was BEAUTIFUL!!!! I so wish for more days like that!!! We got up early and Josh made fresh bread. YUM. it smells soooo good. We went to church and so many people were out traveling. It made me really excited for our vacay in October!!! Anywho...Josh's mom came down for the day to celebrate his birthday. After church she got to meet the girls. They hadn't free ranged in a couple days and they were EXCITED to go find some new grubs!! We made a super delicious lunch. We had an appetizer of roasted red pepper hummus and pita chips. Then we had these lovely salads!
We've been big on salads lately. This is made from organic green leaf lettuce, organic carrots, sauteed onions (which really add A LOT), organic cheese, our fresh eggs and olive oil and vinegar dressing. Note how rich the color of the egg yolk is. That signifies the healthy nutrients our happy girls are producing in their eggs. They are yummy! To accompany our salad....Joshua's homemade bread, made with whole wheat flour from a local (Midway, KY) mill, Weisenburger. He has added flax seeds and oatmeal in some loaves. And for our entree, wild caught Hake fish from Whole Foods. We hadn't had it before. Very similar to other white fish, like Cod. We seasoned it with a mix called Good and Garlicky and a Tropical Pepper blend. Our side, brown rice and lentils. A wonderful meal, but we were stuffed! It was a great afternoon spending time together and sharing this meal. After Sandy left, we pretty much crashed. It was a busy weekend but we had such a great time. I did make these later....."Daddy's Favorites" as Josh knows them....aka...no bake cookies. The first time I've ever made them. We devoured them. Hands down, fabulous weekend!
